Bharli vangi / stuffed brinjal - Maharastra cuisine



Ingredients 

For Stuffing 

3 nos onion (chopped)

2 inch ginger (chopped)

6 no Garlic (chopped)

50 gm Peanuts 

1/4 cup Coconut (grated)

1 tbsp Sesame seeds (white)

water - for blending

For brinjal sauce

1/4 kg brinjal 

30 ml Groundnut oil 

2 nos Onion (chopped)

3 nos Tomatoes (chopped)

1 tsp kashmiri chilli power 

1/2 tsp turmeric powder 

1 tsp coriander powder

1/2 tsp cumin powder 

1 tsp garam masala

1 tsp salt 

chopped coriander leaves 

Method 

1. Cut the brinjals into 4 without cut the end then soak it into water with salt for 15 mins 

2. Roast the peanuts for 2 mins then add the sesame seeds after few mins then add the coconut, ginger and garlic 

3. Roast it well till light brown colour with good aroma then paste it with chopped onion 

4. Stuff the paste into brinjals then keep it aside 

5. Heat the oil, add the chopped onion then saute it well till light brown colour 

6. Add chopped tomatoes then make it smooth texture 

7. Add all above powder masalas and salt, cook it till oil come out stage 

8. Pour 1/2 cup water to make like a gravy 

9. Place the stuffed brinjals into the gravy, stir it slowly then closed lid and simmer it for 15 mins 

10. serve it with rice
