Sambar

 Ingredients

200 gm Dal 

1/4 tsp turmeric powder

1/4 tsp castor oil

Sambar masala 

1/4 tsp fenugreek

1/2 tsp cumin

1/4 tsp peppercorns 

2 nos red chillies

1 tbsp coriander seeds

1 tsp Bengal gram 

1 tsp black gram 

For sambar

2 tbsp oil

1/2 tsp mustard seeds

1/2 tsp cumin

1/4 tsp fenugreek seeds

15 nos curry leaves

50 gm shallots

2 nos tomatoes

1 no Drumstick 

2 nos brinjals

10 gm tamarind 

1/4 tsp asafoetida

Coriander leaves 

Method 

1. Wash and boil the dal in pressure cooker or in vessel till mashing consistency

2. Dry roast the above sambar masala ingredients then make it powder and keep it aside

3. Peel and keep it ready of shallots

4. Cut the vegetables into lengthwise

5. Soak the tamarind in water

6. Heat the oil then add mustard seeds, cumin and  fenugreek

7. Add the curry leaves and shallots, saute it well till light brown 

8. Add sliced tomatoes and salt then leave it to cook well

9. Put the vegetables then saute it for 5 mins, add sambar masala powder

10 pour one cup of water then leave it to cook till vegetables reach tender

11. Pour the dal with water then pour the tamarind pulp, mix it well, 

12. check the taste, finally add the asafoedita and coriander leaves

13. Garnish with tempering
