Ingredients
Aloo (potatoes) – 300 g, medium cubes
Gobi (cauliflower) – 400 g, medium florets
Oil – 3 tbsp
Cumin – 1 tsp
Ginger julienne – 3 tbsp
Green chilli – 2, slit
Garlic Chop - 50 gm
Turmeric Powder – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 2 tsp
Cumin powder – ½ tsp
Garam masala – ½ tsp
Black Pepper - ½ tsp
Kasuri methi – 1 tsp
Salt – to taste
Fresh coriander – 2 tbsp, chopped
Lemon juice – 1 tsp
Method
1. Wash the cauliflower florets in warm water
2. Cut the potatoes into small cubes
3. Cut ginger into juliennes and keep it aside for garnish
4. Heat oil then add cumin, after splutter add ginger paste and saute it for 5 mins
5. Add turmeric powder, chilly powder and salt then mix it well
6. Add the cubes of potatoes and cauliflower then mix it well, cook it for 15 mins
7. Add the chopped tomatoes, slit green chillies and juliennes of ginger, pour the whisked curd then stir it continuously without curdling
8. Cover the lid and cook it for 10 mins
9. Sprinkle the garam masala, squeeze the lemon
10 garnish with ginger and coriander leaves. Serve it with Roti's
